Mango Lime Salmon Salad (macros included)

Hey you! Still trying to recover from Labor Day festivities?

Tuesday felt like a Monday and I’m still struggling to get back into my routine, so I have a feeling you’re right there with me. If you haven’t gotten grocery shopping for the week/weekend, you have no excuse but to try this. If you are also tracking macros and needing to switch your meals up, THIS IS FOR YOU. Keep reading for macros information below.

I will admit this is a “Summery” sounding recipe, but the fact that it is so refreshing and flavorful will have you wanting to eat it all year long. You can’t go wrong with a solid salad. And you know it’s a solid salad, because I’m NOT a salad girl, but here we are.

This dressing alone will make your salad dreams come true, BUT the whole package is pretty bomb.

2 table spoons of salad dressing: Mango Vinaigrette from Trader Joe’s (for the record, it’s not spicy)
1/2 cup edamame
50 grams of tomato
6 oz of Salmon
Juice of a whole lime
1/2 cup of cucumber

Macros
Carbs:15g
Fat 19.3g
Protein: 46.5g

The cherry on top for me is the lime that balances the dressing so well, and the taste it gives the salmon.
If you’re into poke bowls and sushi, I WOULD HIGHLY recommend subbing a baked salmon and using sashimi from Whole foods which offers sushi grade salmon and tuna (they sell it frozen and packaged in 60z servings). You would have the perfect poke bowl.
