Southwest Corn Salad


This is and incredibly easy dish to put together. Especially when you’ve already mixed beans and corn from leftovers in your fridge 😉 Not only is this a great veggie combination, its perfect for warm weather!   • 1/4 green bell pepper finely chopped
  • 1/4 cup pre-cooked corn
  • 1/4 cup low-sodium black beans, drained and rinsed
  • lime juice from 1 lime
  • pinch of sea salt
  • 1/2 avocado chopped
  • 2 table spoons of chopped red onion
  • two small leaves of cilantro
